How to prepare homemade black-eyed peas

Quick-prep: Cover dried beans with water and bring to boil for 1 minute. Remove from heat, cover and let stand for 1 hour. Drain and rinse. Set aside in for recipe or in refrigerator until needed.

Overnight soak: Place dried beans in bowl and add water to cover them about 4 inches. Soak overnight. Drain beans from soaking liquid and give them a quick rinse. Use in recipe or refrigerate as desired.

In recipe will need to simmer for about 40 – 90 minutes in water or chicken stock. Remember to put in enough liquid to cover beans by about at least 2-4 inches.

Will keep in refrigerator for about up to a week.
